We've got the UK dirt bike show coming up soon, I'm going to have nosey at that and then buy these after it when I find nothing!

Probably worth anew topic, but I was thinking about tank panniers to maximise my load volume (risk of taking too much I know!). Does anyone have any recommendations?

Aerostich and Wolfman both make quality tank panniers that can be adjusted to fit most any bike. In practice, I have found that they can hinder your ability to get over the top of the bike when I encounter technical stuff - only a problem if the going gets gnarly. Another less expensive option is the tank panniers that they sell for use on atv; these also have a smaller volune and often have a water bottle holder also. Google is your friend to find further info on any of these options.

PS - if you're planning to load her up fore and aft, I hope you also consider upgrading your fork and shock springs.
