How can I take off the very small grips and put on larger ones?
Is there a wider seat available for the KLX250s?
I'm ready to buy, now that I know how to raise the shifter higher to fit my
foot under it.
I'll be doing 95% of my riding around town, what kind of tire is a good true
dual sport tire, I don't want or need knobbies.

Great questions, let's take them one at a time:
I run Pro-Grip 714 grips on all my bikes. They are a bit bigger than the stock grip and have a 'cushy' feel to them. Here's what they look like:
The easiest way to get the stock grips off is the slice them off. I simply just run an Exacto knife along the top, effectively splitting them in half and peeling them off. To install the new grips, just dip them in some soapy water and slide them on. Let them dry over night and you now have a great set of grips.
Unfortunately at this time, there is not an aftermarket seat available for the KLX250. You can have some mods done by one of the folks that specialize in seats. Don't know how much, but Sargent could probably help. I know of a couple KLR250's that have some nice seats made by Sargent.
The shifter is spline mounted, Just remove it and move in up or down a spline and it will fit. I have sized 14 MX boots that I wear when riding. If they fit under the shifter, any boot will fit under the shifter.
On my KLR650 I run a IRC GP-110 front tire mounted backwards and a Duro HF904 rear tire. On the road I run 32 psi in front and 36 psi in the rear.
