I would agree that I think you'd adapt to the faster response of the stainless lines and adjust to enjoying it and at the same time enjoy the benefits of extra grip.
When it comes to hard braking, the last thing you want is to get to that point when you're braking hard and decide you need more and increase your pressure and instead of getting the deeper bite you want, you just get the squish of a swelling brake line and think wait, I was looking for more.
