yeah starting and stop with wear out the starter faster.
unless you'r ride has no fan or the fan doesn't kick on when it is supposed then there is no need to turn it off. when functioning properly the fan should come on and lower the temp back down. if that isn't happening then the coolant temp fan switch is bad and needs replacement. you may even be able to find one that is set to about 20* lower than stock.

As I understand it, when the engine is shut off and the fluid stops moving there is nothing to carry away the heat that was already generated in the cylinder. Since the cylinder is hotter than the rest of the engine and there is nothing to carry the heat away, it will spread inside the engine increasing the core temperature. Its not a huge jump in temp, and it happens every time the engine shuts off so its not a problem, the only question is does shutting the engine off really help since the core temp will increase uncontrolled whereas with the engine running, its normal operation will control the temp increase and eventually stop it.
The manual switch sounds really good, especially if you could put it on a timer like electric window defrosters that only run for 10 minutes at a time.

you could link a relay for the fan to the neutral light - automaticly turns off when you get moving.
turning off the engine helps by not adding any more heat, the pump won't be running but a certain amount of fluid convection still occurs carying the hot coolant to the radiator and the cold back to the engine. some cqars/bikes will run the fan after shut down to help aid this process.
