Finally Got to Smoke My Turkey
Ya'll might remember I had to make a seafood Thanksgiving dinner....well yesterday (Saturday) we had a few friends coming over to watch football and drink beer...so I decided to smoke a turkey and surprise the guests...besides they were on sale for $1.29/lb.
Friday after work, pick up fresh turkey from publix and make brine to soak turkey in.
The brine consisted of the following:
1.25 cups of kosher salt
1.5 cups of brown sugar
.5 cup of white sugar
.25 cup of fake maple syrup
1 tbl green cardimom (freshly ground)
1 tbl cumin seed (freshly ground)
1 tbl corriander seed (freshly ground)
1 tbl mustard seed (freshly ground)
1 tsp anise seed (freshly ground)
1 small bunch of fresh sage leaves
Put it all together and submerge the turkey. Put ice on top and in the fridge over night.
Saturday morning...EARLY...lol...time to get ready to start smoking..HOWEVER, my girl wanted some Finger Mullet baked beans, too...uuummm OK
Baked Beans goodies
FINGER MULLET BAKED BEANS
6-8 strips of bacon cut into 1/2 inch squares
1/2 Medium onion, diced
1/2 Bell pepper, diced
1 - 2 Jalapeño Peppers, diced (seeding is optional)
1 - 2 Harbenero peppers, finely diced (optional)
1 - 55 ounce can Bush’s Baked Beans
1-8 ounce can of pineapple chunks, drained
1 Cup Brown Sugar, packed
1 Cup ketchup
1/2 - 1 Tbs. dry (ground) mustard
Sauté bacon pieces in Cast Iron pan until crispy and remove from pan with a slotted spoon. Sauté onion, bell pepper and jalapeño pepper until tender.
In a large mixing bowl combine beans, pineapple, brown sugar, ketchup and dry mustard. Stir in bacon pieces and vegetables. Pour into a 12X9 or a deep 9X9 aluminum baking pan. (While mixing if things look dry, add additional ketchup 1/4 -1/2 cup at a time)
Place in a 220-250° smoker for 2 1/2 – 3 hours (make sure temperature of the baked beans reaches 160° ) or place in a 350° oven and bake for 1 hour.
Here are the beans in a dish ready to go into the smoker:
OK, time for the turkey....pull turkey from the fridge and wash off the surface salt. Then got to stuffing. I am stuffing the bird with:
Blood Orange from back yard tree
Fresh Sage from my mini herb pots
Carrot
Celery
Time to fire up the smoker. Put the turkey on the bottom rack and the beans above. The plan is to cook the turkey for 2+ hrs under constant smoke. Then move to a 425 oven until the breast hits 162. I'll pull the beans at the same time and finish in the oven.
Mmmmmm....turkey after two hours in the smoker, time to put in the oven at 425...friends are arriving real soon, gotta cook quick.
Ohh Ohhh, the hot oven split the skin on the breast Nuthin some bacon can't fix.
Mmmm the breast hit 162....time to Eat!!

It started with huntin and not having a mom around....learned to run a smoker and well....after that I just liked doing it.
Trust me that girls luv a man that can cook good meal
Not cook everyday .... just special events...you will get "special" treatment.
