Bike sometimes dies when braking from high speed? Bad petcock?

With the idle speed set to the proper to 1100-1200 rpms, the engine should have a stable idle. If it does not, you have issues with the pilot system that have been masked by you setting idle speed to 1800.

Roger, I made sure I had a good smooth idle at 1000-1200 before turning it up. It idles like an old lugging Honda single - nice. I just intentionally bumped it up to keep it from stalling as much while playing around in the woods. Thank you (See PM), I appreciate your help.
