Default Surge Tank

Can someone tell me the real purpose of a surge tank? Being new to motorcycles they remind me of an intake muffling box on a car. My Grand am came with a big box that quietened (not sure if that's a word, but you now where I'm going with it) the intake of air. Well, it wasn't long before I pitched that for a better throttle response and throatier sound. Now the real question is, if that piece is removed and individual air filters (little cone shaped ones mounting directly to the carb inlets) were installed would the bike do crazy things like wheelies, in sixth gear because the "surge" tank is missing? In other words, Is it there to prevent an overload of air, and in effect fuel, from reaching the combustion chamber?

got me there, I don't know if it will have the same effect as what a car would do when you remove the box.
