I wouldn't have gone with the 630 pitch at all on a stock 750, especially if it came with the 530's. You will loose mileage with those heavy 630's as well.

Stay with the 530, but would prefer to drop down to the 525, or even the 520 pitches if the sprockets are available for your ride. I did a quick google search, found this, just information and more reading that you already have most of the answers to already. JT Sprockets: Catalogue
I am not promoting that site, just one I found. I prefer to use the supersprox and the DID 520 chain on my performance rides, the zx7 and the 10r, and they have lasted well. So I cannot imagine why you could not go to a long lasting and lighter chain for your 750 and get the ratio's that you are after.
