Woke Up Early this Sunday and Smoked a Butt
$0.99/lb...gotta luv a good sale.
Gave the butt a good rub with my favorite mullet Jerk Seasoning and I cut about an inch cross cut into it prior so I could get the flavors into the meat. Also injected it with apple juice. Ready for the smoker.
So, after 3 hours, 9am, the butt is at 118 and looking pretty good so far. I took the leftover jerk paste and added a cup of brown sugar and then put another layer of rub on....mmmm
Almost 6 hours and no need to adjust temps , the butt just hit 155 and I wrapped it up in foil after a good mop of apple juice after the pic was taken.
The butt came out great, nice, moist and tender. Pulled the whole thing by hand, didn't need and utensils it was so tender. I love my Smoker.....mmmm Cracker pulled pork sammiches Jerk style for lunch all week.

Buy a smoker. It's better than a big bore.
