Actually - I have talked to a lot of folks who have done guided moto tours in Central & South America, and it is rather kickass with a nice combination of on and off-road riding. It is a bit pricey, but looks to be something you should consider doing once.
The only thing is to make sure it is an armed escort. No, I am not joking. Tourists have money, and are prime targets, and if your don't have at least 2 guides that are armed - then look for a different tour.
