Okay I feel like a complete idiot. Idle speed adjustment did nothing.
Buuuuut... a friend of mine came over to look at the bike last night. He turned the fuel switch to off... kept the choke all the way open, and the bike idled like crap for a couple of minutes, close to dying. Then all of a sudden, the rpms raced back up to 7,000 (which is what happens when the choke is open and the bike is warmed up). So he turned off the choke and the bike dropped back down to 1,500 rpms.
The bf said that he suddenly remembered that I'm supposed to turn the fuel switch to "off" when I'm done riding, and that it was something he was taught in his MSF course. Of course, that doesn't apply to fuel injected bikes. But anyway... I don't remember that being taught at all in my MSF course, and the two friends I took it with both agree that we weren't told that.
I'm going to take the bike out for an afternoon ride after work to see if this really fixed the problem. If so... boy do I feel like an idiot. [:@]

Turning the fuel valve off mainly applies to the older bikes without vacuum operated shut-off valves (Mostly bikes made from the 70's and prior.) I'm wondering if you just had some water in the carburettor floatbowls that had to get out. When you turn off the gas petcock valve, the bike is running on the gas present in the float bowls until it's gone. It will also suck out water if there is any.After the gas is gone, the engine will lean out, making the engine rev higher just before it dies.

Well, I got to ride the bike last night and was almost really disappointed because it started running like poo again. But then I remembered that we had fiddled with the idle adjustment before screwing around with the fuel switch. So re-adjusted that and the bike is running perfectly fine again!
