Default Warning light and reasons for it coming on?

According to my owners manual, the 2 reasons my warning light would come on are low oil pressure, or high coolant temp. Twice now riding home from my shop this has happened. This last time I just had a flush and fill of the coolant (50/50) and oil and filter change(10W-40 semi-synthetic). I ride home through the high desert (100F+ at times) and haven't made it more than 10mi into the 40mi ride each time. The first time this happened I figured it was the cooling system, hence the flush and fill. There was some scaling on the cap and the shop pulled the radiator and fully flushed it (no crud and good flow). He could see the coolant moving through the fill neck so he knows the water pump is working. Could this be the cap not holding the pressure? Should I change oil weights? Anyone have any ideas why this happens? EL250 B2 spinning around 6800-7000 @ 55mph.
