Kawasaki Z750S -05 temp issue

Would like to ask suggestions / experience on an odd temperature problem.
Few days ago, I was driving a highway on my Z750S -05. When slowing down to about 60-70 km/h, I noticed that the red temperature light within the speedometer started blinking. Immediately when I speeded up to 80-100 km/h again, the light went off.
I stopped the bike and checked the coolant level, that was ok. I also immediately noticed that the fan was not running, as it definitely should be after driving on high speeds. The bike went on with this behaviour as I drove to work. Then when driving back from work, the same behaviour continued until I again took a break to check how hot the motor is. No boiling, wasn't unusually hot to touch. Then when driving home again, the light went off and stayed off, whatever speed I drove. Now the red temp light starts blinking here at the garage right away when I turn the power on (not even starting the engine), which I call a bit odd behaviour.... No logic whatsoever.
Just trying to figure out where to start diagnosing the problem. I'm still to take the fan leads out and connecting them to battery to see if the fan even works, but as the light turns on even on cold engine / only power on, my main suspect is the temperature sensor. Could this be the case? Or the ECU itself?
