Default 2002 volcan classic 1500 coolant

I was on a hill doing 55. The machine backfired out the carb pretty loud and coolant light went on. I pulled over the machine was running ruff. I shut it down for a few minutes it was very hot. It statrted right up I decided to limp it home slow and steady. Ran fine till i started to add more fuel 35 to 45 mph the it would backfire? Light came on again slow down on the throttle light went off again. It did this every time i reved the engine 4000rpm rang. Pulled into a gas station added alittle radeator fluid It was low but not bad. let cool down and made it home. Still doing the same thing with the coolant light. Mechanics I work with say mabe thermastat. If anyone has any info to share please help

Test the stat, you can do a pressure test of the coolant system and of the radiator cap. An overheated engine will cause poor running. let us know
