Modify CV carb or TM36 for BB 351 kit?

I just received my 351cc cylinder and piston from B&B Cycle Restoration and I am looking for experienced opinions to decide whether I should modify the stock carb or install and jet the Mikuni TM36-68 carb. I have a 2007 which will have the fresh 351 engine, new cams, a fresh top end (head re-conditioned), a lidless airbox, Moose air filter, FMF power bomb header, and a Two Brothers slip on muffler. I am looking for low and mid-range grunt as most of my riding is woods and I need that kind of torque to get over logs and pull me through the deep sand in Jersey. On occasion, we will ride a dual sport event where we will be on road sections but the speeds never exceed 70 mph or so. I know there has been a lot of success with the stock carb and KLXSTER helped me a few years ago with my 2012 351cc jetting that worked very well. I am just looking to see if the pumper might suit my needs more effectively. Any help would be appreciated. I like this 2007 model more that my 2012 and plan to keep it until I croak! Ribit, Ribit...just kidding!

I use my 351 primarily for woods riding in the western NC/ east TN mountains.
I ran the CV for a few years and it worked pretty well, but the biggest difference I've found with the TM is that there isn't any delay on throttle changes.
That helps a lot in technical sections.

I would almost go pumper to get away from the delay in acceleration. That’s my only complaint using the stock carb with the 351 is slow technically riding

Nice part with the TM36-68 is that the jetting has been somewhat established in general. Look at D. Pippin's site and/or do a search here. You will find what has worked.

Thanks everyone. I decided that the pumper was the way to go because of the comments and the information about the carb on the bike with the BB kit. I got one on order today!
