I have been starting to price up some of the common parts. Does anyone know around how much money it would cost to have all of them installed by a dealer?

Call dynojet; I believe that their kit will include all parts needed to jet your bike. All those jet parts, needle and clip should be in the dynojet kit. I bet if you ask the dealer what is actually in the kit he will be stumbling to find a BS answer for you.
The dynojet kits I have installed on street bikes come with all the parts.

I think its pretty close to $1000 in parts with the gas tank / petcock and I would suspect that $400 t o $500 in labor at 60 to 70 bucks per hour X approx. 6 hrs sounds about right so I agree with Notstock that your looking at $1500.00
