1973 F7 getting brought back to life. need help

Morning all, And thanks in advance to any help.

My uncle bought this bike new back in 1973, after all the family and himself almost killed themselves (but loved doing it) it was parked in the farm shed in 1978 cause it just wouldn't go anymore. I came to be in 86, So I would as a kid always go in the shed and play with it thinking I could get it to run.

Well I always asked my uncle if i could try getting it running and he said no, until i persuaded him enough to a point that it was a maybe, so I just took it off his hands without him knowing it a couple months back.

I started by cleaning everything and finding out the rotary valve was junk so I got a nos one. Than replaced the oil injector, and found out the piston was completely junk...Anyway replaced everything and she fired up first try, Getting 40 psi of compression, can ride it down the alley

Problem I'm having is this thing want to rev up to 7k just idling some times, takes it a few seconds after starting but it does it...I'm not a big 2stroke guru and can't figure this part out...it seems to do it especially more if i leave the fuel off after priming....
