1975 KE125 Stalling Issues

I recently bought a '75 KE125 in great condition. I didn't get to test ride it much tbh, but it started up great and idled smoothly. The bike has been well cared for.
The issues I had from the start involved the engine flooding at higher gears. Although I've been riding bikes all my life, and have owned several, this is my first two-stroke. I took it to a respected mechanic and he cleaned the carburetor and replaced the needle valve with a smaller one, stating that over the years they've progressively reduced the size. Out of the shop it ran well and I was able to really open it up and switch gears at higher rpms, whereas this is when it would previously sputter and die. My issue is that after I'd ride it a while, it would stall in lower gears, and nothing I could do would get it to restart. After sitting a while, it would start again but during the course of me being out it would stall a couple of times. Great fun when it runs, but super annoying to have to constantly stall.
I'm hesitant to take it back to the same mechanic, and would welcome any advice, especially if someone else has had the same issues. Again, love the bike and get tons of compliments, but am guessing this is why I got such a good deal on it from the seller.
